* Add the following ingredients into a stainless steel mixing bowl, or on a cutting board.

Ingredients→ Eggs

-Approximately 1 egg per person or 1 egg per 2 people → Half a teaspoon of salt → 4 tablespoons → Start with 3 cups of flour *You must be able to mix the ingredients together, and the dough must take shape. If the dough is too soft, add more flour or if the dough appears difficult to move around, add water to the dough: i.e. room temperature water |
Steps
1. Place your ingredients into a mixing bowl and begin to mix the ingredients with your hands.
*As shown on the photograph, ensure to press the dough so this way the texture of the dough is neither too soft or dry.

2. Once the dough is ready, cut small pieces of the dough (i.e. 5 centimeters)

3. Since your dough is equally divided into small pieces, you can proceed by placing the dough into the pasta machine. You will notice that on the knob of the pasta machine, there are numbers listed from 1-9. In order to avoid the dough getting stuck to the pasta machine, begin with the lowest number, and increase until desired thinness of dough.
*If using the Atlas pasta machine, reaching number 6 is recommended--the higher the number you reach, the thinner your dough will be.

4. When your dough is prepared, put the pieces of dough that you have freshly made on to a pasta drying rack. You will need to dry your dough for around 5-10 minutes in order to simplify your next task:
When your dough feels less humid, you will be able to add the second section piece on your pasta machine as shown on the photo on the left. This will allow you to create long strands of pasta.
*Once you have completed this step, if you feel that your pasta strands are too long, you may cut it according to your preference.

5. Place your freshly made pasta on a pasta drying rack. Wait until your pasta is completely dried, and you can immediately cook your pasta and have a wonderful homemade pasta meal!
